Introduction
Aim: The objectives of this lab experiment are to observe the process of emulsification and to compare the actions of pepsin and saliva (Amylase).
Background Information: The function of the human digestive system is to digest food that is taken in. Digestion is the process by which large, solid substances such as fats and proteins are broken down into small soluble substances. Digestion consists of two main processes, physical digestion and chemical digestion.

Also, instead of using actual Saliva we used an amylase solution. Saliva might contain some substances that will make the breaking down of starch faster, that amylase doesn't. To solve this problem, we should obtain actual saliva.
In the Observing Emulsification experiment, we did not measure the quantity of oil put in each tube. This could have easily altered our results. To solve this problem, we should have measured the quantity of oil put beforehand.
