I could also use an enzyme from mammals instead of bacteria. For example I could use the enzyme mammal pepsin or mammal trypsin. By changing the enzyme to a mammal enzyme I would be able to see if the optimum temperature was the same when the enzyme changed from bacteria to mammal.
