Dalhousie University proposal for new cafeteria system.

The Dalhousie cafeteria system has some flaws that need to be addressed; the main one is the menu. …food waste is washed into a trough, ground in a garbage disposal and stored in a 6,000 gallon holding tank. NMU pays a septic pumper to empty the tank several times a year. This material is land applied by the contractor" (Handel, 2004, p.43). According to this article, if we can reduce the amount of wasted food, we could potentially gain $140,000 extra for the cafeteria budget. This would certainly help change the status of our cafeteria system.
